Mocha Snack Bites Recipe

I haven’t always been a clean eater…

Nutrition knowledge wasn’t very widespread in the 80′s and my mom was busy taking care of 5 kids, so I learned how to cook on my own.

Unfortunately, I cooked a lot of Mr. Noodles, Kraft Dinner, hot dogs, and for snacks, I’d always love getting my dirty little paws on some WAGON WHEELS.

Ever have ‘em?

From what I remember, they were da bomb.

Well now that I’m grown up (in age, not necessarily actions), I’ve learned to forsake the wheels for something healthier…

You can never have too many weapons in your nutritional arsenal. That’s why I’m always looking out for and testing new recipes.

One of my latest tests has been for Mocha Snack Bites. They put wagon wheels to absolute shame.

Make these bad boys and you’ll want to eat the whole pan!

Delicious and Healthy Snack from the Metabolic Cooking Program!

They’re not only a super healthy recipe that gives you 17 g of protein, 15 g of carbs and 1 g of fat per serving, but the best part is that they taste AMAZING, plus the whole pan costs $3 or less which is a heck of a lot cheaper than spending $3 on ONE processed-junk protein bar that’s not nearly as healthy and tastes like chalk.

Here’s the super easy recipe:

Ingredients
- 3/4 cup oatmeal
- 1/4 cup oat bran
- 6 egg whites
- 1 scoop chocolate whey protein
- 1/4 teaspoon baking powder
- 1 teaspoon natural cocoa powder
- 1 tablespoon ground coffee
- pinch of stevia
- 2 apples, diced

Directions
1. In a blender, blend everything except apples until it gets thick and pour into a big bowl.
2. Pour the mix in a baking dish, mix the apples in and cook at 350 deg farenheit for about 30 minutes. Cut into 8 equal size squares.

  1. Hey Eric, how did you get yours to look so moist? Mine came out really dry and we had to add some honey to it.

  2. Hey Eric

Love you recipe. Tasty and easy to make.

fyi baking protein powder denatures the amino chains, and changes the structure of the protein rendering it useless…looks like a great recipe however I would eliminate the protein powder…wasteful imo.

What do u recommend for a whey protein substitute? Would like to avoid the whey…

    Eric Reply:

    Andres,

When I don’t use whey, I use either hemp protein or sunflower seed protein. Both are inexpensive and work well.
