Amazing No-Flour Cashew Butter Muffin Recipe!

This recipe always amazes me and others who try it.

"What, this has no flour? Impossible!"

"Really, no flour, are you serious?"

I once even observed the placebo effect in action where someone was assured there was no flour in the recipe, but got bloated and gassy just as they normally would’ve had they eaten a normal muffin, because of their gluten intolerance.

Weird stuff and just goes to show the power of the mind.

Anyway, they’re also super easy to make and they’re so tasty you’ll want to eat the whole tray.

But don’t – you’ll get just as fat eating these healthy muffins as you would eating regular muffins. :P

Here’s what you need:

INGREDIENTS (makes 12 muffins)

2 ripe bananas

2 eggs

2 tablespoons of honey

4 tablespoons of freshly ground flax

1 teaspoon of baking soda

1 teaspoon of apple cider vinegar

1 cup of all-natural cashew butter (no sugar added)

DIRECTIONS

  1. Preheat the oven to 350 F
  2. Mash up the bananas, eggs, honey and ground flax
  3. Add and mix the baking soda and apple cider vinegar
  4. Add and mix the cashew butter
  5. Drop into muffin wrappers in a pan
  6. Bake for 20-25 minutes (check at 20 to see if they’re done with a toothpick – it should come out relatively dry)
  7. Feel free to add blueberries, nuts, chocolate chips, or whatever else you want to the mix

You can also use all-natural peanut or almond butter instead of cashew, but add another 2 tablespoons of honey to make up for the lower sugar content of these butters.

From my experience, cashew gives you the best results, but mixes (1/2 cashew, 1/2 peanut) also work well.

    I’ve made these 3 times now. They’re also good when you add 1 T. of cocoa. (Which I use to help disguise the green color that occurs when cooking with sunflower seed butter.)

    Damn, these are good! I used 1/2 C. sunflower seed butter, 1/2 C. almond butter. You’re right, you could totally fool people into thinking these have flour. My husband’s gonna go bonkers when I give him one of these and tell him it’s good for him.
